Our Founders' Story

When you wake up one day as a captain of industry (or at least the captain of the grill), you may wonder “what’s next?”

Is there really a cause more noble than pursuit of steak perfection?  One of our founders, Dave, didn't think so.  Strapped with a knife, fork, and some none-of-your-business, Dave jet setted around the globe in search of the perfect steer.

For far longer than a reasonable person would consider pursuing marbleized perfection, Dave kept at it.  

And he found it.  

But just finding the perfect Wagyu doesn’t mean the Wagyu makes its way to you.  One must have a distribution partner with a vast network of discerning individuals and a beard that commands respect.  They call him Wes Mathews.
