The Sirloin End is known for having higher amounts of connective tissue and, as a result, requires more trimming and knifework. Steaks from this region are called ‘Vein Steaks’ and can lead to a relatively poorer eating experience. In short, the Private Label Wagyu Striploin steaks are cut in a way that minimizes connective tissue and gristle.
